Whether you’re having a few friends over for dinner or settling down for an evening on the couch in front of a movie, Matzo Nachos are a great alternative to more unhealthy snacking options like crisps or tortillas.

INGREDIENTS

  • 2-3 Traditional Matzo Crackers broken into large pieces
  • 2 plum tomatoes, small diced
  • 1 medium white onion
  • 1 jalapeño
  • Juice from half a lime
  • 2 tablespoons of coriander (with a bit more for garnish)
  • Salt and pepper
  • 2 tablespoons olive oil
  • Half a cup cheese (cheddar or your favorite), shredded or in pieces
  • Half an avocado diced
  • Half a cup of Greek yogurt

METHOD

To start off, make a fresh salsa by chopping the plum tomatoes and adding the diced onion and jalepenos. Squeeze in the lime juice and add the finely chopped (or lightly blended) coriander, ensuring to save a bit for a garnish too. Season this mixture with salt and pepper, and allow to sit to the side.

Preheat the oven to 200 degrees C (400 degrees F), while breaking up the Traditional Matzo Crackers into pieces big enough to hold and scoop up your toppings (about 4-5 pieces should do it). Lay them out on a piece of foil and drizzle with olive oil, salt and pepper then bake in the oven for about five minutes until they have browned.

Add the cheese, then give the Matzo Nachos another five minutes in the oven to allow the cheese to melt. Finally, top with the salsa, avocado and throw on some coriander as a garnish.
