METHOD

Pre heat your oven to 200C, while you chop and crush your tomatoes to spread across the base of your Matzo crackers.

Lightly steam the kale and rinse, drain and finely chop the artichoke hearts. Lay this on top of the tomato base.

Grate the cheese and drizzle across the Matzo pizzas (this is optional and the pizzas taste great without cheese too) and pop in the oven for about 10-15 minutes.
