Check out this vegan pizza recipe, which uses our delicious Matzos as a light, crispy and remarkably tasty base.

A delicious Israeli cuisine inspired Matzo Pizza that is simple to prepare and tastes great as a snack, light lunch or even a dinner party appetizer.

INGREDIENTS

(To make four Matzo pizzas)

  • 4 Traditional Matzo Crackers
  • 1 200g tub of hummus
  • 1 small aubergine
  • 1 large white onion cut into thin slices
  • Half a large avocado
  • Cayenne pepper
  • Olive oil
  • Salt

METHOD

Pre heat your oven to around 180C while slicing your aubergine into quarter inch thick slices. Place the aubergine slices on a baking tray and drizzle with oil and salt, cooking in the oven for about 20 minutes and flipping half way.

Turn the oven up to 200C and heat a tablespoon of olive oil in a pan. Sautee the onions until caramalised and sprinkle with a little salt as you do. You can also add a little brown sugar to sweeten the onions, obviously making sure it’s a vegan certified brand.

Lay out the Matzos and spread the hummus generously across them, then top with the cooked aubergine and sautéed onions. Cut the avocado in half, scoop out and cut into thin slices and add to the Matzo pizza, sprinkling just a little cayenne pepper on top.

Bake for about 10 minutes and drizzle with a little oil to serve (or with some balsamic vinegar or glaze if you prefer)
