INGREDIENTS

3 Rakusen’s Traditional Matzos

1/2 cup of pecans

1/2 cup of walnuts

1/4 cup of honey

1/4 of olive oil

2 tbsp of brown sugar

1/2 cup of dried sultanas and raisins

1/2 tsp of sea salt

METHOD

Crush the Matzos into small, bite-size pieces. Then mix in the pecans, walnuts and salt.

Meanwhile, heat the brown sugar, olive oil and honey in a pan until the sugar has dissolved. Mix together with the other ingredients ensuring that they are covered with the oil and honey.Spread this mixture evenly onto a tray lined with baking paper. Cook at 150 degrees for 30 minutes, remembering to stir the mixture after 15 minutes.Once finished allow the mixture to cool before breaking up the granola and adding the dried fruit.Matzo Granola can be enjoyed with milk or yoghurt, and can even be shaped into bars before cooking to make your own perfect snack.
