Beef (or Lamb) Wellington Matzo Pizza

INGREDIENTS

4 Rakusen’s Traditional Matzos
300g beef or Lamb
100g cheddar cheese
200g chopped tomatoes
50g chestnut mushrooms
20g scallions
2 tbsp olive oil
Salt and pepper

METHOD

Preheat the oven to 180oC. Thinly slice the beef and season with salt and pepper. Add the olive oil to a pan on high heat. Sear the beef (or lamb) evenly on both sides and remove from the pan. Chop the mushrooms and fry for a few minutes in a pan on medium heat with some olive oil, seasoning with salt and pepper to taste.

Spread the chopped tomatoes evenly on the matzos. Grate the cheese and sprinkle onto the matzos. Add the meat and the mushrooms to the matzos and put in the oven to cook. Finely chop the scallions and once the matzo pizzas have finished cooking, garnish them with the scallions.
