No Hanukkah celebration would be complete without a perfectly cooked latke, so here’s our recipe using our Fine Matzo Meal.
Delicious with either sweet or savoury toppings, latkes make the ideal treat for an afternoon snack or an indulgent dessert.
INGREDIENTS
6 Maris Piper potatoes
3 yellow onions
4 eggs
1/4 cup of Rakusen’s Fine Matzo Meal
2 1/2 tbsp salt
Pepper
Peanut Oil
METHOD
Grate the potatoes and onions, then squeeze out the liquid by hand over a colander.
Remove the potatoes, onions and remaining starch, then beat the eggs and stir in to the mixture.
Add the matzo meal, with a little salt and pepper to your taste, and pour the mixture back into the colander and drain the remaining moisture.
Heat the oil in a pan until sizzling and then begin adding the mixture. Each latke should be around 2 to 3 tablespoons.
Fry for three to five minutes on one side, then turn over and repeat allowing less time for this side to cook. Drain on paper towels once finished.
There you have your simple recipe for wonderful latkes – serve with cinnamon and apple sauce for a delicious dessert, or sour cream and chive for a tasty snack.
