We recently came across a great recipe for matzo fried chicken that we wanted to share. It’s quick, its easy and it makes the most of our wonderful Fine Matzo Meal…

Ingredients

  • 2 cups of Rakusen’s Fine Matzo Meal
  • 6 boneless chicken breasts (skin removed)
  • 2 eggs
  • 2 teaspoons of smoked paprika
  • 1 teaspoon of oregano
  • 1 teaspoon of cayenne
  • 1/4 cup cooking oil
  • A pinch of salt
  • A dash of pepper

Directions:

Slice the chicken breasts horizontally in half, before pounding each piece down to about a quarter of their original thickness.

Beat the two eggs, then drop your chicken in and make sure every piece is well covered.

Put your two cups of Fine Matzo Meal into a separate bowl, adding the paprika, oregano, cayenne, salt and pepper.

Heat a little of the oil in a pan, then take out the chicken pieces and place them gently into the Matzo Meal and spice mixture. Again, make sure you get the whole of the chicken covered.

Place the breaded chicken pieces into the pan and saute for about three minutes on each side before moving to a cooling rack so the excess oil can drip off.

Pop the chicken breasts into a pre-heated oven (about 300F/150C will do it) on a medium heat and cook for about ten minutes.
